原来在蒲种这来记怡保烧猪,前身是其老板的父亲在怡保经营的怡保驰名炭烧金猪,话说老板的父亲拥有30年的烧腊经验,而子承父业的老板则凭着独有的眼光,在蒲种打天下,而经过改良,现在的烧腊更加迎合顾客的胃口。
即烧即卖的烧猪,每天分3轮准时出炉,金黄色的烧猪,漫溢着炭火烤过的独有香味,和着猪肉的味道,在空中弥漫。用的是新鲜的猪只,还有香料一起腌制6个小时,然后推进火炉,就这样,一只皮脆肉嫩的金猪就出炉啦。好吃的烧猪,秘诀在于猪只一定要即剖即烧即卖,因为新鲜的猪烧起来,味道才会是最好。
另外这里的咸鸭也不错吃,用的是英国鸭种,除了肉质比较好,有口感之外,质素也相对的比较稳定。在6个小时,十多种药材腌制下,基本上咸鸭已经是入味非常,每一口都带有淡淡的药材香,却不会过于浓厚,鸭肉的味道并没有被盖过,同时间,鸭味跟药材香在口腔内结合在一起,真的太美妙了!
必点的叉烧选用的是上等的花肉,半肥瘦的猪腩肉,加上秘制的酱汁,炭火熊熊的把肥油都逼出来了!上台的叉烧晶莹剔透,肥瘦分明,甜甜的酱汁夹带猪肉的胶质,又是送饭的一道好菜。这叉烧免不得让人想起若干年前的一部电影里头的食神叉烧饭。
